He is famous for creating the well-known Caesar salad. He made this popular salad at his restaurant, called Caesar's, in Tijuana, Mexico. His brother, Alex Cardini, also helped him with his businesses.

Who Was Caesar Cardini?
Caesar Cardini was born as Cesare Cardini in a town called Baveno in Italy. This town is located by Lake Maggiore. He had seven brothers and sisters. Some of his brothers, like Nereo and Alessandro (Alex), also moved to America to start businesses. Alex worked with Caesar in the restaurant business in Tijuana, Mexico. Caesar first came to the United States in 1913.
Life in America and Mexico
Caesar Cardini returned to the United States in 1919. He opened a restaurant in Sacramento with a partner. Later, he moved to San Diego. He also opened several restaurants in Tijuana, Mexico. At that time, it was illegal to sell alcohol in the U.S. due to a law called Prohibition. Tijuana was a good place for his business because it was outside the U.S. and did not have these rules.
In 1924, Caesar married Camille D. Stump. They had one daughter named Rosa Maria Cardini.
The Birth of the Caesar Salad
Caesar Cardini is widely known for creating the Caesar salad in 1924. This salad quickly became very popular. Many famous people from Hollywood and other places loved it. His restaurant in Tijuana, which later moved into a hotel (now called Hotel Caesar's), became a popular spot.
After a few years, the U.S. ended Prohibition. Also, the Mexican government stopped gambling. This meant fewer tourists visited Tijuana. So, Caesar Cardini closed his Mexican businesses in 1936. He moved back to San Diego. There, he opened the Caesar Cardini Cafe. He also ran other restaurants in the San Diego area.
Later Life and Legacy
Around 1938, Caesar and his family moved to Los Angeles. He then focused on making and selling his famous salad dressing. He even got a special legal protection for his dressing in 1948.
Caesar Cardini passed away in Los Angeles on November 3, 1956, after having a stroke. He was buried in Inglewood Park Cemetery. His daughter, Rosa Maria, took over his food company, Caesar Cardini Foods Inc. Later, the Cardini's brand was sold to another company. Today, the Cardini's brand is still very popular. It offers many different types of salad dressings based on his original recipe.
Caesar Salad Today
In Tijuana, the original Caesar's Restaurant and Bar is still open on Avenida Revolución. It is now run by a famous chef named Javier Plascencia. You can still enjoy the "original Caesar's salad" there, just like Caesar Cardini made it.
