Dak-galbi (Hangul: 닭갈비), also known as spicy stir-fried chicken, is a yummy Korean dish. It's made by cooking diced chicken that has been marinated in a spicy sauce. This sauce is usually made with gochujang, which is a Korean chili paste.
Other ingredients are added to the dish. These include sweet potatoes, cabbage, perilla leaves, scallions, and tteok (which are chewy rice cakes). Many restaurants that serve dak-galbi have special round hot plates built right into the tables. This lets you cook the food fresh at your table! People often eat dak-galbi by wrapping it in fresh Lettuce or perilla leaves. This type of wrap is called ssam.
What's in a Name?
The name dak-galbi comes from two Korean words. Dak means "chicken," and galbi means "rib." However, dak-galbi doesn't actually use chicken ribs. It uses other parts of the chicken, usually diced pieces.
How Dak-galbi Began
Dak-galbi became popular in the 1960s. At first, it was a simple and cheap dish. People would eat it with drinks in small restaurants outside of the city of Chuncheon. It was a good alternative to more expensive grilled dishes that were cooked over charcoal.
The dish quickly became famous in Chuncheon. This city was known for its livestock farms, so fresh chicken was easy to find. Dak-galbi was affordable and came in big portions. Because of this, it was very popular with soldiers and students who were on a budget. In the 1970s, it even got nicknames like "commoners' galbi" or "university student's galbi."
Today, dak-galbi is a special dish from Chuncheon. It's often called Chuncheon-dak-galbi. Every year, Chuncheon holds a festival just for dak-galbi. There's even a special street in the city with many dak-galbi restaurants!
