The first Emack & Bolio's store opened in 1975. It was started by a lawyer named Robert Rook. He was known for helping people in need. He worked with homeless people and groups who wanted peace. He also helped many famous rock bands.

Robert Rook wanted to create a special ice cream shop. He wanted it to be a fun and welcoming place. His idea for a "hippie" ice cream store was quite new. It even came before another famous ice cream brand, Ben & Jerry's, used a similar idea.
