Golbaengi-muchim (Hangul: 골뱅이무침), also called moon snail salad, is a popular Korean dish. It is a type of muchim, which means "salad" in Korean. This tasty salad is made by mixing moon snails with fresh vegetables.
In South Korea, golbaengi-muchim is a favorite anju. An anju is a snack or side dish often enjoyed with meals or at social gatherings. This salad usually has a red, spicy sauce. It is often served with boiled somyeon (thin wheat noodles). You can find golbaengi-muchim sold at pojangmacha, which are popular street stalls in Korea.
How to Make Golbaengi-muchim
Making golbaengi-muchim starts with preparing the moon snails. First, the snails are carefully washed. Then, they are boiled and taken out of their shells. If the snails are large, they are cut in half.
The snail meat is then mixed with many fresh vegetables. Common vegetables include julienned (cut into thin strips) scallions, carrots, onions, and sliced cucumber. Sometimes, soaked and shredded hwangtae-po (yellow dried pollock) is also added.
The salad gets its flavor from different seasonings. These often include chili paste, chili powder, soy sauce, minced garlic, vinegar, and sesame oil. These ingredients create the dish's famous spicy and tangy taste.
Finally, toasted sesame seeds are sprinkled on top for extra flavor and crunch. Often, boiled somyeon (wheat noodles) are served alongside the salad. You can mix these noodles into the spicy salad to enjoy all the flavors together.
