Chinese Gunpowder Green Tea

Other names: Lo Chu Ch’a, Zhu Cha, 珠茶
Origin: Zhejiang Province of China, Taiwan, Indonesia, and others

Quick description: Popular worldwide. Flavor varies according to the growing location of tea used for production

Gunpowder tea is a special kind of tea. Each tea leaf is rolled into a tiny, round pellet. It gets its English name because these pellets look a lot like grains of gunpowder. This rolling method is often used for green tea or oolong tea. Green tea is the most common type of gunpowder tea found outside of China.

The way gunpowder tea is made goes back a long time, to the Tang Dynasty (618–907 AD) in China. It first came to Taiwan in the 1800s. To make gunpowder tea, the leaves are first dried a little (withered). Then, they are steamed and rolled into their small shapes. Finally, they are dried completely. In the past, people rolled the leaves by hand. Today, machines do most of the rolling, except for the very best teas. Rolling the leaves helps protect them from breaking. It also helps the tea keep its great flavor and smell for longer. Some oolong teas rolled this way can even be stored for many years!

You can tell how fresh gunpowder tea is by its look. Shiny pellets usually mean the tea is quite fresh. The size of the pellets also shows its quality. Smaller, tightly rolled pellets mean higher quality tea. Larger pellets usually mean lower quality. Gunpowder tea is sorted into different grades using numbers and letters. For example, "3505AAA" is a very high grade, while "9375" is a lower grade.

Types of Gunpowder Tea

When you buy gunpowder tea, you might find a few different types:

  • Pingshui Gunpowder: This is the original and most common type. It has larger pellets, a nice color, and a strong smell when brewed. You might see it sold as Temple of Heaven Gunpowder or Pinhead Gunpowder.
  • Formosa Gunpowder: This type is grown in Taiwan, near Keelung City. People say it has its own special smell, different from the tea grown in mainland China. Formosa gunpowder teas are usually fresh or roasted oolong teas.

Many other green teas are also rolled into the "gunpowder" shape. These include Chunmee, Tieguanyin, Huang Guanyin, and Dong Ding. Some oolong and fancy jasmine teas are also made this way.

Why Is It Called Gunpowder Tea?

In Chinese, gunpowder tea is called zhū chá. This means 'pearl tea' or 'bead tea'. It's not the same as boba tea!

The English name "gunpowder tea" likely comes from how it looks. The small, dark, grayish pellets look a lot like the explosive powder used in old guns. Another idea is that the tightly rolled leaves "explode" or open up into long leaves when you put them in hot water. Some people also think it's because the tea can have a slightly smoky taste.

There's also a fun theory that the English name sounds like a Chinese phrase. The Chinese words for 'freshly brewed' are gāng pào de, which sounds a bit like "gunpowder."

How to Brew Gunpowder Tea

Brewing tea can be different for everyone, but here's a good way to make gunpowder tea:

  • Use about 1 teaspoon of tea leaves for every 150 ml (about 5 ounces) of water.
  • The best water temperature is between 70°C (158°F) and 80°C (176°F).
  • Before you brew, rinse your teacup or teapot with hot water. This warms it up.
  • For the first and second brewing, let the leaves steep (soak) for about one minute.
  • When brewed, gunpowder tea has a lovely yellow color.

Moroccan tea ritual

Gunpowder tea is very popular in a region called the Maghreb in North Africa. This area includes countries like Morocco and Algeria. Here, it's used to make a special drink called North African mint tea.

The Moroccan tea ritual is a very important part of social life. It's used for everything from a quick visit with a neighbor to big parties with important guests. To make mint tea, people add fresh mint and sugar or honey to gunpowder tea while it's brewing. This delicious drink was later brought to Algeria and became a luxurious drink there too.
