High West Distillery is a company that makes special beverages. It is located in Park City, Utah, United States. This company was the first legal distillery in Utah since a time called the American Prohibition. During Prohibition, it was against the law to make or sell many types of drinks.

High West: A Special Place
High West Distillery is more than just a place where drinks are made. It also has a saloon and a restaurant. These are located in an old building called "The National Garage." This building used to be a livery stable for horses. Next to it is the historic Ellsworth J Beggs house, which was built in 1907. This house is so important that it is listed on the National Register of Historic Places.
How High West Makes Drinks
High West makes its special drinks in small amounts. They use a large, 250-gallon copper pot still. A "still" is a special machine used to make these beverages. Their still is unique because it can work in different ways. This helps them create many different kinds of drinks.
Some of High West's products are made from ingredients they buy from other companies. For example, they have bought ingredients from MGP Distillery in Indiana. High West then blends and finishes these products in Utah. They also make their own drinks from start to finish at their Utah location. Over time, they have started using more of their own ingredients in their products.

High West Distillery makes several different types of beverages. Some are available all the time, and others are special, limited releases.
Rendezvous Rye Whiskey
Rendezvous Rye Whiskey was one of the first drinks High West sold. At first, this drink was made using ingredients from other companies. High West blended these ingredients in Utah using local water. Rendezvous Rye won a Double Gold Medal at a competition in San Francisco in 2008. Today, Rendezvous Rye is made more with High West's own ingredients.
Other Popular Drinks
High West also has other drinks that are always available:
- American Prairie Bourbon: This drink is made from ingredients sourced from different distilleries. It is aged for 2 to 13 years.
- Double Rye!: This is a blend of rye whiskeys aged 2 to 7 years. It uses ingredients from other companies and also from High West's own distillery.
- Campfire: This unique blend includes rye whiskeys, bourbon, and a type of Scotch whiskey. It is aged for 4 to 8 years.
Limited Edition Drinks
High West also releases special drinks that are only available for a short time each year:
- BOURYE: Limited Sighting: This is a mix of rye whiskey and two types of bourbon. It is released in small amounts every year.
- A Midwinter's Night Dram: This is another blend of rye whiskeys from different sources, including High West's own. It is also released once a year in limited quantities.
Discontinued Products
Sometimes, High West stops making certain products. One example is Yippee Ki-Yay. This drink was a blend of rye whiskeys that were aged in special barrels. It was first released in 2015, but High West stopped making it in 2020.
