After chewing, the bees spread the nectar into the honeycomb cells. The nectar is still very watery at this point. To make it thicker, bees fan their wings over the cells. This fanning helps to evaporate the water from the nectar. When most of the water is gone, the nectar becomes thick, sticky honey. Finally, the bees cap the honey-filled cells with beeswax to keep it fresh.

Different Kinds of Honey

Just like flowers come in many colors and smells, honey also comes in many different types. The kind of honey depends on the flowers the bees visited to collect nectar.

For example, if bees mostly visit clover flowers, the honey will be light in color and have a mild taste. This is called clover honey. If they visit buckwheat flowers, the honey will be dark and have a strong, rich flavor. Other popular types include orange blossom honey, lavender honey, and manuka honey. Each type has its own unique color, smell, and taste.
