Jiro Ono (小野 二郎, Ono Jirō, born 27 October 1925) is a very famous Japanese sushi chef. He used to own a special sushi restaurant called Sukiyabashi Jiro in Tokyo, Japan. Many people think he is one of the best sushi makers ever. He even created new ways to prepare sushi that are used today.
Early Life and Training
Jiro Ono was born in a city called Tenryū in Shizuoka Prefecture, Japan. This city is now part of Hamamatsu. He started working in a local restaurant when he was only seven years old. Later, he moved to Tokyo to learn how to make sushi. He became a qualified sushi chef in 1951. In 1965, he opened his own restaurant, Sukiyabashi Jiro (すきやばし次郎), in Ginza, Tokyo.
A World-Famous Restaurant
Sukiyabashi Jiro is known all over the world. Many important people have eaten there. Jiro Ono has served former Japanese Prime Minister Shinzo Abe. He also served United States President Barack Obama. President Obama said that the sushi at Sukiyabashi Jiro was the best he had ever tasted. He mentioned that he had eaten a lot of sushi growing up in Hawaii.
Jiro's Family and Legacy
Jiro Ono has two sons, Yoshikazu and Takashi Ono. Both of his sons are also talented sushi chefs. Takashi, his younger son, runs his own restaurant that has received special awards. Jiro Ono was featured in a 2011 movie called Jiro Dreams of Sushi. This film showed his amazing dedication to making sushi.
Jiro and his family are worried about overfishing. They fear that some important ingredients for traditional sushi might disappear. As of 2023, Jiro Ono has stepped back from the daily work at Sukiyabashi Jiro. His son, Yoshikazu, now mostly runs the restaurant.
