The pantxineta was actually an idea to copy a French dessert. This French dessert was called "frangipane." It usually had an almond-based filling. But a baker at Otaegui decided to try something different. They used a thick custard cream instead of almonds. Then, they wrapped it all in a crispy puff pastry.
At first, they called this new dessert "frantxi-pan." But in the local Basque dialect, the name quickly changed. It became "pantxineta," which is what we call it today!
