Discovering the History of Prekmurska Gibanica
For hundreds of years, Prekmurska gibanica was a special dish served at celebrations and important events in the Prekmurje region. No one knows the exact start of its recipe, but it seems to have changed and improved over many centuries.
Early Descriptions of the Pastry
The oldest known document that talks about gibanica is from 1828. It was written by József Kossics. He described how a wedding party in Prekmurje was never held without this pastry. He wrote that the dough was rolled very thin. Then, it was sprinkled with grated cabbage, turnips, or quark. Another thin layer of dough was placed on top, and the sprinkling was repeated. This process was done 10 or 11 times to make a very big cake!
Prekmurska Gibanica in Europe
In 2006, Prekmurska gibanica was chosen to represent Slovenia. This happened during the Café Europe event, which was part of the Austrian presidency of the European Union. It was a way to celebrate Europe Day.
Since March 2010, Prekmurska gibanica has a special protection in the EU. It is recognized as a Traditional Speciality Guaranteed. This means its recipe and how it's made are protected, making sure it stays true to its traditional roots.
