Red pudding is a tasty meat dish often found in chip shops in parts of Scotland. It's a bit like a sausage and is served as another option instead of fish with chips.

This special pudding is most common in eastern Scotland, especially in an area called Fife. However, it's not as easy to find there these days.

Red pudding is made from a mix of ingredients. These include beef, pork, pork rind (which is like pig skin), or bacon. It also has suet (a type of fat), rusk (a dry bread product), wheat flour, different spices, salt, beef fat, and even some colouring to give it its red look.

The mixture is shaped into a sausage about eight inches long. This is similar to how black pudding, white pudding, and the chip shop version of haggis are made.

Red pudding is usually prepared by covering it in a batter. Then, it's deep fried until it's crispy and hot. If you buy just the pudding, it's called a "single red." If you get it with chips, it's known as a "red pudding supper."

Other Kinds of Red Pudding

Some butchers in Scotland sell a different kind of red pudding. This version is made completely from finely minced pork. It's shaped into a ring, much like black pudding.

These butcher-made red puddings have a different recipe from the ones you find in chip shops. They are often flavored with spices like cumin and are easy to spot because they have a red casing. Traditionally, these were made by "German" pork butchers, mostly along Scotland's east coast. People usually cook and eat them for breakfast.

There's also another type of red pudding that is a special food in Dundalk, a town on the east coast of Ireland. This Irish red pudding is made with oatmeal and is quite similar to white pudding.
