Roujiamo (say "roh-jee-ah-moh") is a super popular street food from China. It's like a delicious sandwich with tasty meat stuffed inside a special flatbread. What is Roujiamo?
Roujiamo is a yummy snack or light meal. It has two main parts: the meat and the bread. The meat is usually pork. It is cooked for many hours in a special soup. This soup has over 20 different spices and seasonings. This long cooking time makes the meat very soft and full of flavor.
Different Kinds of Meat
While pork is the most common meat, you can find other types too. In some areas, like where many Muslim people live in Xi'an, the meat is often beef. This beef is seasoned with spices like cumin and pepper. If you travel to Gansu Province, you might find roujiamo made with lamb.
The Special Bread: Baijimo
The meat is then chopped up and put inside a type of flatbread called "baijimo." Real baijimo is made from wheat flour dough. It has yeast in it, which makes the bread rise a little. Traditionally, this bread is baked in a clay oven. This gives it a special crispy outside and soft inside.
Today, many places make baijimo in a frying pan. This way is faster, but the taste is a bit different from the oven-baked version. The way the bread is made and the spices used for the meat can change the taste a lot. So, every roujiamo you try might taste a little unique!
Roujiamo's Long History
Many people think of roujiamo as the Chinese version of a Western hamburger or meat sandwich. It's actually one of the oldest "hamburgers" in the world! The idea of the "mo" (the bread) goes back to the Qin dynasty (221–206 BC). That's over 2,200 years ago! The way the meat is cooked dates back even further, to the Zhou dynasty (1045–256 BC).
People have been putting meat inside bread for thousands of years all over the world. So, it's hard to say exactly where this tasty idea started first. But roujiamo definitely has a very long and interesting history in China!
How to Enjoy Roujiamo
Roujiamo is often eaten as a quick snack or a light meal. Sometimes, it's sold as a combo with another popular Chinese dish called liangpi. Liangpi is a type of cold noodle dish. You can find roujiamo with small changes in different parts of China. This shows how popular and loved it is across the country.
