Rumaki is a tasty appetizer, which is a small dish served before the main meal. It comes from something called tiki culture, which was popular in the 1950s and 1960s. You could often find rumaki at fun Polynesian-themed restaurants like Trader Vic's during that time.
What is Rumaki Made Of?
Rumaki is usually made with water chestnuts and pieces of chicken liver. These are wrapped in crispy bacon. The whole thing is then soaked in a special sauce called a marinade. This sauce often includes soy sauce and either ginger or brown sugar. After soaking, rumaki can be cooked by frying or baking until it's ready to eat.
Where Did Rumaki Come From?
One of the first times the word rumaki was seen was on a menu in 1941. This was at a restaurant called Don the Beachcomber in Palm Springs.
The name, just like the dish itself, was probably created at Don the Beachcomber. We don't know for sure where the name came from. However, some people think it might be a shorter version of the Japanese word harumaki, which means 'spring roll'.
