Stuffed mussels (called Midye dolma in Turkish) are a tasty snack from Turkey. They are plump orange mussels filled with rice that has herbs and spices mixed in. Midye dolma is a very popular and common street food in cities along the coast of Turkey.

How Did Stuffed Mussels Start?
The idea for Midye dolma is often linked to Armenians in the Ottoman Empire. Back in 1888, a book mentioned that Armenians made this dish using large mussels. They used a special kind of fat called "zibir yağı."
Later, in the 19th century, Turkish women in İstanbul also started cooking stuffed mussels. In the 1960s, many people from Mardin moved to İstanbul. They started to make and sell Midye dolma in the Galata area. Today, most of the street carts selling this food are still run by people from Mardin. Some say that the Mardin-style stuffed mussels are spicier than the Armenian-style ones.
How Are Stuffed Mussels Made?
The most common mussel used for Midye dolma is called Mytilus galloprovincialis. First, the mussel shells are cleaned very well. Any rough parts on the outside are removed.
Next, the mussels are put into hot water. This helps their shells open up a little. Then, a mix of rice, oil, salt, and different spices is added inside the shells, along with the mussel meat. The types of spices can change depending on the region. Common spices include red pepper, currants, and black pepper.
After filling, the shells are closed. The Midye dolma then cooks for about 15 to 30 minutes in boiling water. Once they are cooked, sellers usually let them cool for about 10 minutes before serving them.
Different Ways to Enjoy Stuffed Mussels
Midye dolma is usually eaten with fresh lemon juice squeezed over it. The lemon juice adds flavor and stops the rice from getting dry. Some places might add different spices or sauces.
One special way to make them is by adding dried Tamarind to the outside of the mussel shell. Another way is to color the mussels with squid ink, which also adds more flavor. Some restaurants even use rice made with white onions that have been lightly cooked.
Where to Find Stuffed Mussels
You can often find Midye dolma sold by street vendors with small carts in Turkey. These vendors are mostly found in coastal cities like Istanbul, İzmir, and Bodrum.
In Istanbul, two famous places for street food are Istiklal Caddesi and Eminönü. You will often see Midye dolma carts there, along with other Turkish street foods. In Izmir, street food is popular all over the city, especially near the water.
Vendors often sell Midye dolma late into the night. They usually offer a good deal, like 10 mussels for 10 Turkish liras.
Stuffed Mussels in Restaurants
Besides street vendors, you can also find stuffed mussels in restaurants. Both casual and fancy restaurants serve them.
Sometimes, Midye dolma is served in small places alongside kokoreç, another popular Turkish street food. These places often have simple seating. You usually order and pick up your food yourself, just like at a vendor.
In nicer restaurants, Midye dolma is often served as a meze, which is like a Turkish appetizer. These are usually seafood restaurants, and the mussels might be followed by a fish dish.
Keeping Stuffed Mussels Safe
Scientists have studied stuffed mussels to make sure they are safe to eat.
A study in 2020 looked at tiny plastic pieces called microplastics in stuffed mussels. It found that 100 grams of mussels had about 5.8 microplastic pieces. Istanbul had the most microplastics per mussel.
Another study in 2011 checked street mussels from Ankara. It found that about half of them were not safe to eat because of bacteria like Salmonella. Other bacteria like E. coli and B. cereus were also found. A study in 2007 showed that lemon juice can help reduce some of these bacteria over time.
In 2021, a study looked at metal levels in stuffed mussels. It found that some metals like Cr, As, and Cd could be a health risk in some places. However, Pb was not found to be a risk. These studies help make sure our food is safe.
