The Ayam Cemani is a special and rare type of chicken that comes from Indonesia. These chickens are famous for being almost entirely black! This happens because of a special gene that causes a lot of dark coloring, called hyperpigmentation (or fibromelanosis). This means their feathers, beak, and even their insides are black. Ayam Cemani chickens are known for their strong leg muscles, which make them quite fast compared to other chickens.

The name Ayam Cemani tells us a lot about this unique bird. In Indonesian, Ayam simply means "chicken." The word Cemani comes from the Javanese language. It means "thoroughly black," even describing their bones. This name perfectly describes their amazing dark color!
Where Do Ayam Cemani Chickens Come From?
The Ayam Cemani chicken is a true Indonesian breed. It first appeared on the island of Java, in Indonesia. People there have likely kept these chickens for a very long time, possibly since the 12th century. They were often used in special cultural traditions.
Dutch explorers first wrote about these chickens. Later, in 1998, a Dutch breeder named Jan Steverink brought them to Europe. Today, you can find Ayam Cemani chickens in many countries. These include the Netherlands, Belgium, Germany, Slovakia, Sweden, Italy, the USA, and the Czech Republic. It's also thought that Dutch sailors might have brought them to Europe even earlier.
What Makes Them So Black?
Ayam Cemani chickens are truly unique because almost everything about them is black! This includes their beaks, tongues, combs, and wattles. Even their meat, internal organs, and bones are dark black or gray. They are medium-sized chickens, famous for their striking look. While they can be friendly, they are also a bit shy.
The Science Behind the Black Color
Their amazing black color comes from a genetic condition called fibromelanosis. This means their body tissues have too much dark pigment. You can also see fibromelanosis in other chicken breeds with black or blue skin, like the Silkie chicken. This special trait comes from a duplicated part of their 20th chromosome. It involves a gene called endothelin 3 (EDN3).
Size and Eggs
Ayam Cemani roosters usually weigh between 2–2.5 kg (4.4–5.5 lb). The hens are a bit lighter, weighing 1.5–2 kg (3.3–4.4 lb). These hens lay eggs that are tinted or cream-colored. However, they are not very good at sitting on their eggs to hatch them. So, they rarely raise their own chicks. Each egg weighs about 45 grams (1.6 oz). Ayam Cemani chickens typically live for 6 to 8 years.
Healthy and Special Meat
Ayam Cemani meat is quite special! Compared to other chickens from Indonesia, it has more protein and less fat. It's also full of good things called antioxidants. These chickens also have properties that help with glucose (sugar) in the body. Because of these healthy benefits, their meat is usually more expensive than regular chicken meat.
