Batata vada (Marathi: बटाटा वडा, lit. potato fritter) is a super popular vegetarian fast food from Maharashtra, India. Imagine a yummy mashed potato ball, covered in a special chickpea flour batter, and then deep-fried until it's golden and crispy! It's usually served hot with tasty chutney.
These delicious potato fritters are typically about two or three inches wide. In different parts of India, you might hear them called by other names like aloo bonda, aloo vada, batata bonda, potato bonda, or potato vada. Even though they started in Maharashtra, batata vadas are now loved all over India!

How to Make Batata Vada
Making batata vada involves two main parts: the potato filling and the crispy batter that covers it.
Preparing the Potato Filling
First, potatoes are boiled until soft, then mashed up a bit. Next, some spices and fresh ingredients are cooked together in a pan. These include asafoetida, mustard seeds, fresh chillies, onions, and curry leaves. A paste of garlic and ginger is added, along with turmeric (which gives it a nice yellow color) and salt. This flavorful mix is then cooked with the mashed potatoes.
Making the Batter and Frying
A thick batter is made using chickpea flour. It's seasoned with salt, turmeric, and red chilli powder. Sometimes, a tiny bit of baking powder is added to make the batter extra fluffy and light. To make the fritters, small balls of the potato mixture are dipped into this batter. Then, they are carefully placed into hot vegetable oil and deep-fried until they are golden brown and perfectly crispy.
If you like things spicy, you can even add some red chilli paste to the potato mix!
How to Enjoy Batata Vada
Batata vadas are almost always served piping hot. They often come with fresh green chillies and different kinds of chutneys. Some popular chutneys include Shengdana Chutney, which is a dry powder made from crushed groundnuts, and a delicious garlic-coconut chutney.
One of the most common and famous ways to eat batata vada is inside a soft bread roll, creating a popular snack called Vada pav. It's a super tasty and filling meal on the go!
