A briouat or briwat (Arabic: البروات) is a tasty puff pastry from Moroccan cuisine. It can be either sweet or savory.
Briouats are often filled with different ingredients. They can have meat like chicken or lamb. Some are filled with fish and shrimp. These savory fillings are mixed with cheese, lemon, and pepper.
The pastry is wrapped in a very thin dough called warqa. This dough is like paper. Briouats are usually shaped like triangles or cylinders.
Sweet Briouats
Briouats can also be a delicious dessert. Sweet briouats are often filled with a paste made from almonds or peanuts. After they are filled, they are fried until golden. Then, they are dipped in warm honey that has a lovely orange blossom water flavor.
How They Are Cooked
After being filled and shaped, briouats are either fried until crispy or baked in an oven. Once cooked, they are often sprinkled with fresh herbs, flavorful spices, or sometimes with powdered sugar for the sweet versions. They are a popular snack or appetizer in Morocco.
