How to Make Chorchori

Making Chorchori involves a few simple steps. It's a great way to turn everyday vegetables into something special.

Preparing the Spices

First, cooks prepare something called a chaunk. This means frying spices in oil or ghee (a type of clarified butter). Common spices include black mustard seeds and minced ginger. Sometimes, a mix of five spices called panch phoron is used. This step makes the oil flavorful.

Cooking the Vegetables

Next, chopped vegetables are added to the spiced oil. They are stir-fried quickly. Then, water, salt, and more spices are added. The vegetables are left to simmer, which means they cook slowly in the liquid.

Getting the Smoky Flavor

Once all the water has been soaked up or cooked away, the vegetables start to fry in the oil or ghee left in the pot. You'll hear a sizzling sound as the vegetables begin to get a little bit charred. This charring is what gives Chorchori its special smoky taste. After a few minutes, the pot is taken off the heat.

Finishing the Dish

After the pot cools for a short time, the thin, slightly charred crust at the bottom is gently stirred into the rest of the dish. This mixes in all the delicious smoky bits.
