Couscoussier
A traditional couscoussier, used for steaming couscous.

A couscoussier is a special cooking pot used to make couscous. It's a type of food steamer that has two parts, one on top of the other. People in North Africa, especially in countries like Libya, Tunisia, Algeria, and Morocco, use it a lot in their traditional Berber cuisine.

This unique pot helps cook couscous perfectly by steaming it. Steaming makes the couscous light and fluffy, which is how it's meant to be eaten.

How Does a Couscoussier Work?

A couscoussier is made of two pots that fit together. The bottom pot is bigger and holds water or a tasty soup. When this liquid heats up, it creates steam.

The top pot is smaller and sits right on top of the bottom one. It has a lid and a special bottom with many small holes. You put the dry couscous grains into this top pot. The holes let the steam from the bottom pot rise up and cook the couscous. This gentle steaming process makes the couscous soft and ready to eat.

Once the couscous is steamed, you can sometimes use the bottom pot to finish cooking a stew or soup that will be served with the couscous.

Materials and Design

Couscoussiers can be made from different materials. Traditionally, they were made from ceramic. Today, you can find them made from various metals like steel, aluminium, or copper. No matter the material, the design always includes the two interlocking pots for steaming.

Where is it Used?

The couscoussier is a very important tool in the kitchens of North Africa. It's central to making couscous, which is a staple food and a big part of meals in countries like Morocco, Algeria, Tunisia, and Libya. Couscous dishes are often served at family gatherings and celebrations.
