Einstein Bros. Bagels is a popular American chain of cafes that sells fresh bagels, pastries, and coffee. The company started in 1995 and grew by buying smaller bagel shops across the United States.
The company is now part of a larger group called Panera Brands, which also includes Panera Bread and Caribou Coffee.

History of the Company
Einstein Bros. was started in 1995 by a company called Boston Chicken, which is now known as Boston Market. The idea was to create a new chain focused on breakfast foods like bagels.
How Did Einstein Bros. Get Started?
In March 1995, Boston Chicken created a new company to run its bagel business. This new company bought four different bagel chains from areas in the U.S. where bagels were not very common yet.
These chains included Offerdahl's Bagel Gourmet in Fort Lauderdale, Bagel & Bagel in Kansas City, Baltimore Bagel in San Diego, and Brackman Brothers in Salt Lake City. These shops were all successful because they sold both classic and new types of bagels to customers who were excited to try them.
Buying Noah's Bagels
Noah's Bagels was a popular bagel shop started in 1989 by Noah Alper in Berkeley, California. By 1996, it had grown into a chain of 38 stores. That year, Einstein Bros. bought Noah's Bagels for $100 million, making it part of their growing company.
Joining with New World Coffee
In the early 2000s, Einstein Bros. faced some money problems. A company called New World Coffee, which already owned other bagel shops like Manhattan Bagel, decided to buy them.
In 2000, Einstein Bros. had to file for bankruptcy, which is a legal process for companies that cannot pay their debts. After this, New World Coffee bought Einstein Bros. for $190 million. This deal combined the companies and helped Einstein Bros. to keep running.
More Recent Changes
The company has continued to change over the years. In 2014, Einstein Noah Restaurant Group, the parent company of Einstein Bros., was bought by an investment firm called JAB Holding Company.
Then, on August 5, 2021, another big change happened. Einstein Bros. Bagels merged with two other famous food chains, Panera Bread and Caribou Coffee. Together, they formed a new, larger company called Panera Brands. This means all three chains are now part of the same big family of restaurants.
