Lobster Newberg (also spelled Lobster Newburg or Lobster Newburgh) is a yummy American seafood dish. It is made with tasty lobster, rich butter and cream, and a bit of cognac (a type of brandy) and sherry (a type of wine). It also uses eggs and has a secret ingredient: Cayenne pepper, which gives it a little kick!
This special dish was created by Ben Wenberg, who was a sea captain. He showed his amazing recipe at a famous place called Delmonico's Restaurant in New York City in 1876. The manager, Charles Delmonico, loved it!
The Story Behind Lobster Newberg
After some changes by the restaurant's main chef, Charles Ranhofer, the dish was added to the menu. It was first called Lobster à la Wenberg and quickly became super popular.
A New Name for a Popular Dish
Later, Captain Wenberg and Charles Delmonico had an argument. Because of this, the dish was taken off the menu. But people still wanted it! So, to keep customers happy, the restaurant brought it back. They just changed the name to Lobster à la Newberg or Lobster Newberg. They used an anagram, which means they rearranged the letters of Wenberg's name.
This dish is still very popular today. You can even find its recipe in French cookbooks. When Chef Ranhofer's recipe was first printed in 1894, it showed how to make it. The lobsters were boiled for a long time, then fried in butter. After that, they were simmered in cream until the sauce became thick. Finally, a bit of Madeira (another type of wine) was added.

Lobster Newberg has a cousin dish called Lobster Thermidor. This dish is also made with lobster meat, eggs, cognac, and sherry. Lobster Thermidor first appeared in the 1890s, a few years after Lobster Newberg became famous.
