Einstein Bros. Bagels is a popular American chain of bagel cafes. They are known for serving fresh bagels, coffee, and other breakfast and lunch items. The company started in the 1990s. It brought the idea of bagel cafes to many parts of the United States.
A Taste of History
Einstein Bros. Bagels began in 1995. It was created by a company called Boston Chicken. This company is now known as Boston Market. They wanted to offer more breakfast foods. Today, Einstein Bros. is owned by Panera Brands.
How it Started
Boston Chicken first formed the Einstein and Noah Bagel Corporation. This happened in March 1995. They bought four smaller bagel companies. These companies were in parts of the U.S. that didn't have many bagel traditions.
The companies they bought included:
- Offerdahl's Bagel Gourmet in Fort Lauderdale
- Bagel & Bagel in Kansas City
- Baltimore Bagel in San Diego
- Brackman Brothers in Salt Lake City
These bagel shops were similar. They offered both classic and new bagel flavors. They were often in neighborhoods where people hadn't tried many bagels before.
Noah's Bagels was another company. It was started in 1989 by Noah Alper. His first shop was in Berkeley, California. By 1996, Noah's Bagels had 38 stores. Einstein Bros. bought Noah's Bagels for $100 million that year.

New Owners and Mergers
In 2000, Einstein Bros. faced a big challenge. They had loaned too much money to their store owners. This caused the company to run out of money.
A company called New World Coffee then stepped in. New World Coffee was started in the early 1990s. It bought Einstein Bros. for $190 million. New World Coffee had also bought other bagel chains before this.
Later, in 2014, the Einstein Noah Restaurant Group was bought by JAB Holding Company. This company owns many other well-known brands.
On August 5, 2021, Einstein Bros. made a big announcement. They joined with Panera Bread and Caribou Coffee. Together, they formed a new company called Panera Brands.
