How to Make Okpa

Making Okpa is a fun process. Here are the steps:

  • Next, take the Okpa flour, ground crayfish, salt, and seasoning. Put them all in a large bowl. Add a good amount of palm oil and mix everything with a spatula. Keep mixing until the mixture turns a nice yellow-red color.
  • Then, pour lukewarm water into the mixture. You can also add some blended pepper if you like a little spice. Stir everything well with a wooden spatula until it becomes smooth.
  • Now, carefully wrap the smooth mixture into the prepared leaves or a small plastic bag.
  • After that, boil some water in a pot. Gently place the wrapped Okpa into the boiling water. Let it steam for at least an hour. You'll know it's fully cooked when the Okpa becomes solid.
  • Finally, serve your hot Okpa! It tastes great with custard, oatmeal, or pap.
