Pain brié is a special kind of bread that comes from Normandy, a region in France. Its name tells us how it's made! "Brie" comes from an old word, brier, which means "to pound" or "to beat".
This bread is made by kneading the dough for a long time. Then, the dough is actually beaten. This special process makes the bread very dense and heavy. It also gives it a "tight crumb," which means it has a very close texture with tiny air bubbles. Because it was so strong and filling, Pain brié was often the bread given to fisherman and sailors for their long journeys at sea. It would keep them full and last a long time.
