How It Began in 1832

The very first Sachertorte was created in 1832. Prince Klemens von Metternich, an important person in Austria, asked his kitchen to make a special dessert. He wanted something new for his evening guests.

The head chef was sick that day. So, a young apprentice named Franz Sacher stepped in. He was only 16 years old and in his second year of training. Franz invented the first Sachertorte, which was a big hit with the guests.

From Apprentice to Hotel Owner

After this, the cake was almost forgotten for a while. Franz Sacher went on to work in other cities like Budapest and Presburg (now Bratislava). In 1848, he opened his own fancy food shop and winery in Vienna.

His son, Eduard Sacher, later perfected the cake recipe. Eduard learned how to bake at the famous Demel bakery. This bakery supplied sweets to the royal court. At first, the cake was sold mainly by Demel. But after Eduard bought the Hotel Sacher, it was sold there too.

The "Cake War"

In the 20th century, there was a friendly disagreement between the Hotel Sacher and the Demel bakery. They both wanted to be the only ones to sell the "Original Sacher Torte." This led to a legal battle that lasted many years.

In 1963, they finally reached an agreement. The Hotel Sacher was allowed to use the name "Original Sacher Torte." The Demel bakery could sell their version as "Eduard Sacher Torte."

What Makes Sachertorte Special?

The Sachertorte is made from a chocolate sponge cake. It has a thin layer of apricot jam in the middle. Dark chocolate icing covers the top and sides of the cake.

There is a small difference between the cakes from Hotel Sacher and Demel. The "Original Sacher Torte" from Hotel Sacher has two layers of apricot jam. One layer is in the middle of the cake, and another is just under the chocolate icing. The cake from Demel has only one layer of jam, which is under the icing.

Where to Buy the Original

You can buy the "Original Sacher Torte" only in a few special places. These include the Hotel Sacher locations in Vienna and Salzburg. You can also find it at Cafes Sacher in Innsbruck and Graz. There's also a Sacher Shop in Bozen and at the Vienna airport's duty-free area. You can even order it online from the Hotel Sacher's website.

The exact recipe for the icing is a secret. But it is known that it uses three different types of chocolate. These chocolates are made just for this cake by different companies.

How It's Served

Most of the time, Sachertorte is served with a dollop of unsweetened whipped cream. The plain cream helps balance the rich sweetness of the cake.
