However, no copies of the Apicius cookbook have this recipe. There are similar dishes from Arab countries around the 900s. Because of this, experts now think Tavukgöğsü likely came from Arab cooking. It then became part of Turkish food.
How Tavukgöğsü Is Made
The traditional way to make Tavukgöğsü uses white chicken breast meat. First, the chicken is boiled until it is very soft. Then, the meat is pulled apart into tiny, thin pieces. Sometimes, it is even pounded until it is smooth.
Next, the chicken is mixed with milk and sugar. Cracked rice or other ingredients are added to make it thick. Sometimes, a flavor like cinnamon is also included. The mix becomes a thick pudding. It is often shaped nicely before serving.
