Mughlai paratha (which means Moglai pôroṭa in Bengali) is a yummy street food from the Bengal region. It's thought to have started in a place called Bengal Subah during the time of the Mughal Empire. This dish is a type of soft, fried bread. It's usually filled with tasty ingredients like minced meat (called keema), egg, onions, and pepper. Sometimes, it's just a regular paratha bread with these fillings inside.

The Story of Mughlai Paratha

Mughlai paratha is one of many special recipes that came into Bengali cuisine during the time of the Mughal Empire. The Mughal Empire was a powerful kingdom that ruled over a large part of India many years ago.

People believe that Mughlai paratha was first made during the rule of Mughal Emperor Jahangir. It's said that his cook, Adil Hafiz Usman, created this dish. Usman was from a place called Bardhaman in West Bengal.

This dish might have been inspired by a Turkish flatbread called Gözleme. The Mughal rulers mostly influenced the food in big cities like Murshidabad and Dhaka. These were the main cities of Bengal back then.

Later, the dish traveled to Kolkata in West Bengal. This happened after Kolkata became the capital city under the British Raj. The British Raj was when the British ruled India. Mughlai paratha then became a very popular street snack in Kolkata.

To make Mughlai paratha, you need a few key ingredients. These often include whole-wheat flour and ghee, which is a type of clarified butter.

The filling usually has eggs, finely chopped onions, and green chili peppers. Fresh coriander leaves are also often added for flavor.

Sometimes, people use minced chicken or mutton (lamb meat) for the filling. But you can also find versions of Mughlai paratha without any meat inside.
