How the Noodle Idea Started
The idea for Noodles & Company came from Aaron Kennedy. He used to work in marketing for Pepsi. One day, he ate at a noodle shop in New York City. He realized there weren't many restaurants that focused on noodle dishes. Noodles are a main food in many countries.
In 1994, Aaron started creating recipes. He worked in his mother-in-law's kitchen. He had help from Joe Serafin and Ross Kamens. Aaron used his own money and got investments from friends and family.
The very first Noodles & Company opened in October 1995. It was in Denver, Colorado. Aaron teamed up with Tom Weigand, a real estate developer. They opened a second restaurant in Madison, Wisconsin, soon after.
Early Challenges and Changes
In its first few months, Noodles & Company faced problems. They lost money and almost closed down in 1996. A newspaper reviewer gave them a bad review. Other newspapers also had similar negative comments.
Aaron Kennedy decided to make big changes. He started a campaign called "Redefine Noodles & Company." The team worked hard to improve everything. They looked at other noodle restaurants for ideas.
They changed the restaurant's look to be warmer. They also stopped using steam tables to keep food warm. Instead, they cooked each dish fresh when ordered. New managers and a chef helped improve the menu. Within two months, the food was much better.

The company had 37 locations in 2002. By 2007, they had 142 restaurants. In 2003, they started allowing people to open their own Noodles & Company restaurants as franchises. By 2007, 22 stores were franchises.
In 2004, the restaurants got a new look. They used lighter colors and focused more on takeout orders. The kitchen was made open so customers could see their food being cooked. The company's main office moved to Broomfield, Colorado, in 2006. Aaron Kennedy stepped down as CEO that year. Kevin Reddy took over as the new CEO.
Recent Company Updates
In 2010, a group of investors bought most of Noodles & Company. In 2013, the company decided to sell shares to the public. This is called an initial public offering (IPO). They wanted to raise $75 million.
