Palóc soup (in Hungarian, it's called palócleves) is a yummy soup from Hungary. It's a bit like the famous Hungarian goulash soup, but it's lighter and has a slightly sour taste. Even though it's called "Palóc" soup, it wasn't actually named after the palóc people, who are a group of Hungarians.

The Story Behind Palóc Soup
We don't know the exact history of Palóc soup, but there are some cool stories about how it started!
How the Soup Got Its Name
One popular story says that a famous chef named János Gundel created the soup. He made it for a special restaurant opening event. A well-known writer named Kálmán Mikszáth was invited to this event. Mikszáth had a nickname: "the greatest of Palóc people." Chef Gundel decided to name his new soup after Mikszáth's nickname!
A Soup Contest Legend
Another story comes from a famous cookbook by Elek Magyar, called Az ínyesmester szakácskönyve. This book says that Palóc soup was first made for a cooking contest. The judges loved it so much that they ate two bowls each! That's how good it must have been.
What's in Palóc Soup?
Palóc soup is usually made with different kinds of meat. You might find mutton, pork, or beef in it. Sometimes, but not often, it's made with turkey.
Key Ingredients
When the soup was first made, the vegetables were often cooked separately. Today, the soup usually includes yummy ingredients like potatoes, green beans, carrots, and parsley root.
Adding Flavor
Many recipes for Palóc soup mix in sour cream to make it creamy and rich. You can also serve sour cream on the side, so people can add as much as they like. To give the soup its special sour taste, newer recipes often use a little vinegar or lemon juice. Sometimes, a herb called dill is added for extra flavor and as a nice decoration on top.
