How is Stracciatella Made?

Making traditional Stracciatella is quite fun! First, people beat eggs until they are smooth. Then, they mix in grated parmesan cheese, salt, pepper, and a little nutmeg. Sometimes, they also add lemon zest or a bit of semolina.

Did you know that Stracciatella soup even inspired an ice cream flavor? The famous gelato (Italian ice-cream) flavor called Stracciatella was created in 1962.

A restaurant owner in a town called Bergamo invented it. He said he was tired of stirring eggs into broth for his customers from Rome. So, he came up with the idea of adding chocolate shreds to vanilla ice cream, just like the egg shreds in the soup!
