A Tofu skin roll, also called a Tofu roll, is a yummy dish often served as part of dim sum. Dim sum is a style of Chinese cuisine where small portions of food are served, like a brunch. You can find these rolls in Hong Kong and in Chinese restaurants all over the world. They usually come on a small plate with two or three rolls. The outside of every tofu skin roll is made from a special ingredient called tofu skin.

What is Tofu Skin?
Tofu skin is made from bean curd. When soybeans are cooked to make soy milk, a thin layer forms on top, similar to how skin forms on heated milk. This thin layer is carefully lifted off and dried to create tofu skin. It can be used fresh or dried and then rehydrated (made soft again with water) for cooking.
Different Kinds of Tofu Skin Rolls
Tofu skin rolls can be cooked in different ways. They can be fried until crispy or steamed until soft. The inside of the rolls can have many different fillings, like pork, vegetables, fish, or beef.
Fried Tofu Skin Rolls
The fried version of this roll is known as fu pei gyun (腐皮捲). The word "fu" comes from "tofu," which makes sense because the skin is made from bean curd. Some Chinese restaurants serve these crispy fried rolls in the evening. They are often served with mayonnaise for dipping.
Other names for the fried roll include tofu gyun (豆腐捲). These rolls can be filled with many tasty ingredients. Some common fillings are shrimp, chicken, leeks, bamboo shoots, small carrots, tofu, scallions, sesame oil, or bean sprouts.
Steamed Tofu Skin Rolls
The steamed version of the roll is usually called sin zuk gyun (鮮竹捲). These rolls are made with dried tofu skin, which is called fu zhu (腐竹).
When the rolls are cooked, the dried tofu skin becomes soft and tender. This is because it gets hydrated, meaning it soaks up water and becomes soft again. This soft and tender roll is the most common type served as a dim sum dish during yum cha sessions. Yum cha is a traditional Chinese breakfast or brunch where people drink tea and eat dim sum. Steamed tofu skin rolls often have bamboo shoots inside them.
