How This Famous Kebab Began
The story of Tunde Ke Kabab started a long time ago, in the 17th century. This was during the time of the Mughal Empire in Northern India. The ruler of the Awadh state, called the Nawab of Awadh, loved food but had lost most of his teeth. He wanted to enjoy his favorite kebabs, but they were too hard to chew.
So, the Nawab held a cooking contest! He challenged all the best chefs, called Khansamahs, to create the softest kebabs ever.
The Chef with One Arm
One of the chefs in the contest was named Haji Murad Ali. He was known as Tunda, which means "one-armed" in Hindi, because he had only one arm. Despite this, he was an amazing cook.
Haji Murad Ali worked hard to create a kebab that was super soft. He used a special mix of over 100 Indian and other spices. When the Nawab tasted it, he was amazed! The kebab was so tender it melted in his mouth. He immediately declared Haji Murad Ali the winner.
How the Kebab Got Its Name
Because Haji Murad Ali, the "one-armed" chef, created this incredible dish, the kebabs became known as Tunday ke Kebab. This literally means "the one-armed man's kebabs."
These kebabs became very popular in Awadh and other royal courts. Even today, a famous restaurant in Lucknow called Tunday Kababi, which started in 1905, is known for serving these delicious buffalo meat galouti kebabs.
