Zhejiang cuisine, also known as Zhe cuisine, is one of the eight main cooking styles from China. It comes from the traditional ways of cooking in Zhejiang Province. This province is located south of Shanghai and its main city is Hangzhou, which was once a capital of China.

Zhejiang food is usually fresh and soft. It is not greasy and has a pleasant smell. It has four different styles: Hangzhou, Shaoxing, Ningbo, and Wenzhou (also called Ou cuisine).

Cooking Styles of Zhejiang

Zhejiang cuisine has at least three main styles. Each style comes from a different big city in the province.

Hangzhou Style

The Hangzhou style is known for having many different kinds of dishes. It often uses fresh bamboo shoots in its cooking.

Shaoxing Style

The Shaoxing style is special for how it cooks poultry (like chicken and duck) and freshwater fish.

Ningbo Style

The Ningbo style is famous for its seafood. Dishes from Ningbo are often fresh and can be quite salty. During the Qing dynasty, sweet treats from Ningbo were very popular all over China.

Wenzhou Style (Ou Cuisine)

Some people also see the Wenzhou style, or Ou cuisine, as its own separate style. This is because Wenzhou is close to Fujian Province. Wenzhou cooking is known for having a lot of seafood, as well as poultry and other meats.

Famous Dishes to Try

Zhejiang cuisine has many delicious dishes. Here are a few well-known ones:

  • Beggar's Chicken: This dish is a whole chicken baked in clay. It was first from Jiangsu Province but became very popular in Hangzhou. Now, it is a famous Hangzhou dish.
  • Dongpo Pork: This is a tasty dish made from pork belly. The pork is fried and then slowly cooked in soy sauce and wine. It is named after a famous poet.
  • Longjing Shrimp: This dish cooks shrimp with Longjing tea. The tea gives the shrimp a unique and fresh flavor.
  • West Lake Fish in Vinegar: This dish uses a grass carp fish. It is served with a sweet and sour sauce made with vinegar.
  • Wenzhou Pig Powder: This is a rice noodle soup. It contains pig intestine and duck or pig blood. It is very popular in Wenzhou.
