Arzak is a very famous restaurant located in San Sebastián, Spain. It is well-known for its special type of food called New Basque Cuisine. In 2008, the restaurant's owner and head chef, Juan Mari Arzak, won a big award. He was honored for making Basque cooking modern and exciting for the whole world.
What is Arzak Like?
Arzak serves a modern version of Basque cuisine. This style is inspired by cooking methods and ways of serving food found in nouvelle cuisine, which means "new cooking."
The restaurant is inside an old brick building with many floors. The main dining area is on the ground floor. Above the restaurant, there is a huge wine cellar. It holds over 100,000 bottles of wine!
The Test Kitchen
There is also a special "test kitchen" at Arzak. This kitchen was set up in 2000. It is where the chefs, including the Arzaks, invent new recipes and cooking methods.
The test kitchen has more than 1500 different ingredients. These ingredients can give the chefs ideas for new dishes. With help from other chefs, the Arzak test kitchen creates about 40 new dishes every year. It takes about three to six months to create and perfect each recipe.
History of Arzak
The building where Arzak is located was built in 1897. It was built by the grandparents of the current owner, José Maria Arzak Etxabe and Escolastica Lete. They first opened it as a wine inn and tavern. At that time, the village of Alza was separate from San Sebastián.
Later, the next generation, Juan Ramon Arzak and Francisca Arratibel, took over. They turned the inn into a full restaurant. Today, the cooking duties are shared by Juan Mari Arzak and his daughter, Elena Arzak.
