Awara broth is a special stew from French Guiana. It's called Bouillon d'awara in French and Bouyon wara in Guianan Creole. This tasty dish is made with the soft inside part, called pulp, of the Awara fruit.

Many different ingredients are added to the Awara broth. These can include smoked meats like chicken, fish, bacon, and even corned beef. You might also find fresh seafood like shrimp or crab. Lots of vegetables are used too, such as spinach, cabbage, eggplant, and chili peppers.

There's a famous saying about this dish: "If you eat the broth of awara... to Guiana you'll come back!" This shows how much people love it.

Making Awara Broth

Making Awara broth is a big job! It can take several days to prepare. First, the pulp of the Awara fruit is cooked for a long time. This makes it very soft and ready for the stew.

Then, all the other ingredients are added. These include smoked meats, fresh seafood, and many different vegetables. Everything cooks together slowly. When it's ready, the broth has a bright orange or light brown color. It is usually served hot with plain white rice.

A Special Holiday Meal

Awara broth is more than just a meal; it's a symbol of friendship and welcome in French Guiana. It is often made for important Christian holidays. People especially enjoy this stew during Easter and Pentecost. Sharing Awara broth is a way to show kindness to guests and celebrate together.
