Bebinca or bebinka is a delicious layer cake. It comes from Goa, India. This special dessert has influences from Portugal.

Traditional Bebinca cakes have many layers, usually between 7 and 16. Bakeries can make them with fewer or more layers. This sweet treat is very popular during the Christmas season. But you can find it all year round in Goa. This is because many tourists visit the area. Bebinca can be enjoyed fresh or kept for a long time.

Bebinca is also made in Portugal and Mozambique.

How Bebinca is Made

Making Bebinca takes time and patience. The main ingredients are flour, sugar, ghee (which is a type of clarified butter), egg yolks, and coconut milk.

To make it, a thin layer of the batter is spread onto a grill. This layer is baked until it is cooked. Then, another thin layer of batter is added on top and baked. This process is repeated many times. Each layer is carefully stacked on top of the last one.

Sometimes, Bebinca is decorated with nutmeg or thin slices of almond.
