A Look Back at Harveys
Harveys first opened its doors in January 1987. It was a partnership between chef Marco Pierre White and a restaurant owner named Nigel Platts-Martin. They had met before, and Nigel bought the restaurant. He put Marco in charge of the kitchen. Nigel later said he knew Marco was very talented. He was just unsure how things would turn out.
About a year after opening, the restaurant closed for a short time. It was being updated and made new inside. A designer named David Collins helped with this work.
Famous Chefs Who Worked There
Many chefs who later became very successful worked at Harveys.
- One was Philip Howard. He later won two Michelin stars at his own restaurant, The Square.
- Another famous chef was Gordon Ramsay. He worked at Harveys from 1988 to 1991. Gordon Ramsay became a student of Marco Pierre White. He later created his own group of many restaurants.
Marco Pierre White once said the team at Harveys was like the "SAS of kitchens." This meant they were a very skilled and strong team. Many famous people visited the restaurant. These included actor Oliver Reed and model Koo Stark.
Why Harveys Closed
In 1993, Marco Pierre White decided to leave Harveys. Nigel Platts-Martin bought Marco's share of the restaurant. Harveys closed in August 1993. The space was then reopened as "The Bistro." This was meant to be a sister restaurant to "The Canteen." Marco co-owned The Canteen with actor Michael Caine.
Later, in 1995, the restaurant was relaunched again. It became a new restaurant called Chez Bruce. Chef Bruce Poole ran this new place. Marco Pierre White had left Harveys because he felt it was too small. He wanted a bigger place to try and win a third Michelin star.
What Was on the Menu?
Harveys served classic French cuisine. One popular dish was tagliatelle pasta with oysters. Another dish was similar to one served at another famous restaurant. It was a pig's trotter (a part of a pig's leg) served with morel mushrooms.
For dessert, guests could enjoy a lemon tart. There were also dishes like "Crackling Pyramide." Sweet soufflés made of chocolate were served with chocolate sauce. A special nougat ice cream dish was called "Biscuit Glacé." This dessert was also featured in Marco Pierre White's famous cookbook called White Heat.
