Mishti doi is a type of yogurt that is fermented and sweetened. It comes from the Bogra District in Bangladesh. Unlike plain yogurt, Mishti doi has a unique way of being made. This gives it a special taste and texture. There are even different kinds of Mishti doi, like the famous Nabadwip-er lal doi from Kolkata.

How is Mishti Doi Made?

Making Mishti doi is a careful process. First, milk is boiled for a long time. This makes the milk thicker and richer. Then, it is sweetened with sugar. Sometimes, people use gura (brown sugar) or khejur gura (date molasses).

After sweetening, the milk is poured into special containers. These containers are usually made of earthenware. Earthenware pots are important because they help the yogurt become thick. Water slowly evaporates through the pot's walls. This also helps keep the yogurt at the right temperature. This temperature is perfect for the good bacteria to grow. These bacteria turn the milk into yogurt. Sometimes, a little bit of cardamom is added. This gives the Mishti doi a lovely smell and taste. The yogurt is then left to ferment overnight.
