Motsunabe (もつ鍋) is a popular Japanese stew. It is a type of nabemono, which means it's cooked in a pot. This warm and hearty dish is made with special parts of beef or pork, often called offal. It also includes lots of fresh vegetables.

What is in Motsunabe?

Motsunabe is known for its main ingredient: beef or pork offal. This usually means parts like intestines. The stew is cooked in a flavorful soup base. This soup is often made with soy sauce, garlic, and chili pepper. Sometimes, a rich miso paste is used instead.

How is Motsunabe Made?

To make motsunabe, the offal is first prepared and placed in a cooking pot. Then, the special soup is added. The mixture is boiled for a while. After that, fresh vegetables are put into the pot. These usually include cabbage and garlic chives. These vegetables add a nice crunch and flavor to the stew.

When most of the stew is eaten, champon noodles are often added to the leftover soup. These noodles soak up all the delicious flavors. They make a perfect ending to the meal.

Where Does Motsunabe Come From?

Motsunabe first became popular in Fukuoka Prefecture, a city in Japan. It was a local dish enjoyed by many people there. In the 1990s, some restaurants brought motsunabe to Tokyo. This made the dish very famous across Japan. News and TV shows helped it become a big trend.

Motsunabe's Popularity Over Time

After its big boom, motsunabe became less popular in some areas like Kantō region and Tokyo. This was partly due to concerns about a cattle disease called BSE. However, motsunabe stayed very popular in Fukuoka. It is still enjoyed there because it is tasty and not too expensive. People often eat it with friends and family, especially when enjoying a drink.

In the Kansai region of Japan, there is a similar dish called horumonyaki. It also uses beef or pork offal. This shows how different parts of Japan have their own special ways of cooking with these ingredients.
