Kattama (Kazakh: қаттама; Kyrgyz: каттама), also known as katlama or katmer (Turkish: katmer), is a type of fried layered bread. It is very popular in the countries of Central Asia. You might also hear it called gambir (Mongolian: гамбир).

What is Kattama?

Kattama is a delicious bread that has many thin layers. It is often fried, giving it a crispy outside and a soft inside. This bread is a common part of meals in places like Kazakhstan, Kyrgyzstan, and Mongolia.

The name "qatlama" comes from a Turkish word meaning "folded." This is because of how the bread is made. Cooks fold the dough many times to create all those wonderful layers.
