At first, sampans were just homes for the Tanka people. But over time, they became popular tour boats for visitors. Even famous people and writers enjoyed cruising on these boats! While they were on the river, they would be served this delicious porridge. Because the porridge was served right on the sampan boats, it became known as "sampan porridge" or "boat congee."

How Sampan Congee is Made

Sampan congee is packed with many different ingredients. These often include tasty things like pork, fish, and shrimp. You'll also find crunchy fried peanuts and a deep-fried twisted dough stick. Fresh green onions are usually added too.

The main part of the congee is made from rice, pork bones, and bean curd. These are all boiled together until they become a smooth, blended porridge. Thin slices of raw grass carp and squid are quickly cooked in hot water. Then, the congee is served in a bowl. It's usually mixed with soy sauce, warm cooking oil, shredded ginger, and chopped green onion. Sliced grass carp, shredded squid, and cooked duck are also added.
