Cajeta de Celaya is a super yummy sweet treat from Mexico! It's a type of caramel candy, but it's usually made from sweetened goat's milk. It's very similar to dulce de leche. In Mexico, this special candy comes from the city of Celaya in the state of Guanajuato.

In 2006, the H-E-B grocery store chain in San Antonio, Texas, started selling cajeta-flavored ice cream.
In September 2010, cajeta was named the Bicentennial Dessert of Mexico. This honored its long history, traditions, and where it came from. Cajeta was created in Celaya, Guanajuato. This state is where Mexico's fight for independence began in 1810. During the Independence War, cajeta was easy to store and transport. It could last for many months without going bad. This made it an important food for the soldiers who often didn't have much to eat.
