Jorim (Hangul: 조림) is a popular Korean dish. It's made by cooking ingredients like vegetables, meat, fish, seafood, or tofu in a flavorful liquid. This liquid, called broth, is simmered until it soaks into the ingredients. It also gets thicker as it cooks down.
Most Jorim dishes use soy sauce for their main flavor. But sometimes, cooks add gochujang (a spicy chili paste) or gochutgaru (chili powder). This is especially true when cooking fish that have a stronger taste, like mackerel or saury. In the old days, when food was prepared for Korean kings and queens, Jorim was called jorini (조리니).
What's in a Name?
The word Jorim comes from the Korean verb jorida (조리다). This verb means "to boil down" or "to simmer until the liquid is absorbed." Even though people cooked this way for a long time, the name Jorim didn't appear until the 1700s.
Before that, these dishes were often grouped with other similar foods. They were called jochi, which also included dishes like jjim (steamed dishes) and jjigae (stews). The first time Jorim was officially listed as a type of food was in a cookbook from the 1800s. This cookbook, called Siuijeonseo, described how to make jang-jorim, which is beef simmered in soy sauce.
Types of Jorim Dishes
There are many different kinds of Jorim, each with its own main ingredient. Here are some popular ones:
- tubu-jorim (두부조림) – This is tofu cooked in the Jorim style.
- galchi-jorim (갈치조림) – Made with largehead hairtail fish.
- gamja-jorim (감자조림) – A tasty dish using potatoes.
- godeungeo-jorim (고등어조림) – Features chub mackerel and radish.
- jang-jorim (장조림) – This is beef simmered in soy sauce.
- kkaennip-jorim (깻잎조림) – Uses perilla leaves.
- kkongchi-jorim (꽁치조림) – Made with saury fish.
- ueong-jorim (우엉조림) – Features burdock roots.
- yeongeun-jorim (연근조림) – Uses lotus roots.
