Delicious Fish Dishes
Long ago, the Volga Finns, who are ancestors of the Mordovians, settled near rivers. This was perfect for fishing! The Mordovian people have always respected nature, and this shows in their cooking. Fish was prepared in many different ways. They ate it raw, frozen, dried, salted, and boiled. Even parts like fish liver, fish eggs, and cod-liver oil were used to make tasty dishes.
Meaty Meals
Meat and poultry were often stewed, baked, or boiled. You wouldn't find many fried meat dishes in traditional Finnic cooking. Roasting meat became popular later, around the 1800s, after learning from the Tatar people.
To keep meat fresh, they used different methods. Drying was one of the oldest ways. They would boil meat first, then dry it in an oven or under the sun. Any fat from the cooking broth was saved and used for other meals. Freezing meat was another way to store it for a long time.
In ancient times, horsemeat was sometimes eaten. Later, it was mostly used for special ceremonies called molyam.
Fresh Herbs and Veggies
Many farms in Mordovia grew lots of vegetables. These included cabbage, cucumbers, potatoes, garlic, carrots, beans, beets, turnips, radishes, and pumpkins. During summer and autumn, people enjoyed eating fresh fruits. Pickled cucumbers were often used in recipes. Beets and pumpkins were sometimes steamed and eaten as a sweet treat.
A popular traditional soup was Shschi (cabbage soup). It was made with cabbage and potatoes cooked in chicken broth. Onions and carrots were added at the end for extra flavor. Instead of spices, they used wild herbs like watercress, horseradish, onion, cow parsnip, horsetail, nettle, and wild goutweed to make their dishes taste great.
Marvelous Mushrooms
Mushrooms were a very important ingredient in traditional Mordovian food. People prepared them in many ways. They were boiled, salted, fried, soured, and dried to be enjoyed all year round.
Grains and Special Breads
Grains were super important in Mordovian cooking. The Finnic peoples mainly used wheat, barley, spelt, and rye (a type of dark grain). Many special meals were linked to farming seasons, family events, and public holidays. For example, millet porridge wasn't just a yummy dish for weddings, christenings, or funerals. There was also a special ritual called baba's porridge (female porridge) made on a bride's last day at home.
Bliny (Pancakes)
Bliny or pancakes were a favorite dish for Mordovians. They called them pachat. These pancakes were made from rye, wheat, millet, and pea flour. Traditionally, Mordovians liked their pancakes to be quite thick. They even added boiled potatoes to the dough! These delicious pancakes were often served with milk and honey.
