What's the Dough Like?
Most Pirogs are made with yeast dough. This is the kind of dough that rises and becomes soft and fluffy. Sometimes, Pirogs are also made with other types of dough. These include shortcrust (which is crumbly) or puff pastry (which is flaky).
Pirogs are usually full-sized pies. But there are also smaller versions called pyrizhky or pirozhki. These are small enough to hold and eat with just one hand!
Shapes and Styles
Pirogs come in different shapes. Often, they are oblong, which means they are longer than they are wide, with ends that get a bit narrower. You can also find Pirogs that are shaped like a rectangle or a circle.
Some Pirogs are fully closed, like a traditional pie. Others are open-faced, meaning they don't have a top crust. These look more like a tart.
What's Inside?
The best part of a Pirog is its filling! It can be either sweet or savory.
Sweet Fillings
For a sweet Pirog, people often use cottage cheese. You might also find delicious fruits inside. Common fruit fillings include apples, plums, or different kinds of berries.
Savory Fillings
If you prefer something savory, Pirogs can be filled with meat or fish. Other popular savory fillings include mushrooms, cabbage, buckwheat groats (a type of grain), or potato.
In Ukraine and Russia, savory Pirogs are often served with borscht (a type of soup) or other kinds of soup. They make a warm and filling meal!
