Back then, tarts were seen as fancy food. Rich people and nobles loved them. This was different from pies, which were often eaten by everyone. At first, tarts usually had savoury fillings, like meat. But over time, people started to prefer sweet tarts. They began filling them with fruit and custard instead.

One of the earliest tarts was the Italian crostata. This tart dates back to at least the mid-1400s. It's like a simple, open fruit tart that you can make in a rustic, free-form way.

Tarts usually stand up on their own. They have a firm pastry base made from flour. The filling inside is often thick. The sides of a tart usually go straight up, like a wall.
