The Florina pepper (pronounced Flo-REE-na) is a special type of pepper. It grows in a region called Western Macedonia in northern Greece, especially around the city of Florina. That's where it gets its name!
This pepper is known for its deep red color and its unique shape, which looks a bit like a cow's horn. When it first starts growing, it's green. But after August 15th, it ripens and turns a beautiful red.
People in Greece love the Florina pepper for its sweet and rich flavor. It's used in many different Greek dishes. You can also find it sold in cans in other countries. These canned peppers are often peeled by hand and packed with olive oil, salt, and vinegar.
History of the Florina Pepper
The journey of the Florina pepper began in the 17th century. Its seeds were brought all the way from Brazil to Greece. Local farmers in areas like Florina, Prespes, and Kozani started growing them.
However, the pepper grew best only in Florina. It really liked the climate and soil there. Because of this, other regions eventually stopped growing it. Florina became the main place where this special pepper is produced.
The Florina pepper is part of the nightshade family, just like tomatoes and potatoes. In 1994, the World Trade Organization (WTO) gave Florina red peppers a special award. It was recognized as a "Protected Designation of Origin." This means only peppers from the Florina region can be called Florina peppers.
Every year, at the end of August, there's a fun pepper festival. It takes place in a small village called Aetos, Florina. People celebrate with music, and they offer guests many delicious dishes made with peppers.
How Florina Peppers Grow
For Florina peppers to grow well, they need certain conditions. They like soil that drains water easily. They also need lots of sunshine and places with low winds. Strong winds can harm their branches and roots.
The best temperatures for these peppers are between 20° to 26° Celsius (about 68° to 79° Fahrenheit) during the day. At night, they prefer temperatures around 14° to 16° Celsius (about 57° to 61° Fahrenheit).
It takes about 18 weeks for the peppers to grow and ripen. They usually become fully ripe after mid-August. A good quality Florina pepper should be bright red, thick, firm, and taste sweet. If a pepper looks dull, has cracks, or seems spoiled, it's best not to eat it.
Cooking with Florina Peppers
Florina red peppers are very versatile in the kitchen. They are often roasted and then stuffed with different ingredients. Popular fillings include rice, meat, shrimps, or feta cheese.
These sweet peppers are also used to make sauces, salads, and even pasta dishes. You can mash them to create a delicious pâté following traditional recipes.
Florina peppers can be prepared in many ways to preserve them. They can be dried, canned, frozen, or pickled. Pickled Florina peppers are often used as a garnish for Greek salads.
