Varick is a town in Seneca County, New York. In 2020, about 1,656 people lived there. The town is named after Richard Varick. He was a soldier in the American Revolution and a mayor of New York City. His nephew, Anthony Dey, was Varick's first Town Supervisor.
Varick is located in the middle of Seneca County. It is southeast of the city of Geneva.

The History of Varick
Long ago, the Cayuga and Seneca tribes lived on the land where Varick is now. These tribes were part of the Iroquois Confederacy. From 1656 to 1684, Jesuit missionaries visited them.
In 1779, the Sullivan Expedition marched through the area. Their goal was to destroy the villages of the Cayuga and Seneca tribes. After the American Revolution, much of Varick's land was set aside. This land was for veterans in the Central New York Military Tract (1788). A part of the eastern area was a Cayuga Indian Reservation until 1795. White settlers then began to move in.
The Town of Varick was officially created in 1830. It was formed from the Town of Romulus.
During World War II, the U.S. Government took over a large part of the town. They built the Seneca Army Depot there. This depot operated from 1941 to 2001. It was a major employer and the only large industry in the town.
Since 1985, Varick has become known for its wineries. Five wineries are located closer to the eastern side of town. They are along Cayuga Lake. These include Swedish Hill Vineyard and Knapp Winery. Most of them are part of the Cayuga Lake Wine Trail.
The Simon Ritter Cobblestone Farmhouse is a historic building in Varick. It was added to the National Register of Historic Places in 2008.
Varick's Geography
Varick covers about 45.7 square miles (118.3 square kilometers). About 32.0 square miles (82.9 square kilometers) is land. The remaining 13.7 square miles (35.4 square kilometers) is water. This means almost 30% of the town's area is water.
The eastern border of Varick is Cayuga Lake. This lake also forms the border with Cayuga County. The western border is Seneca Lake. This lake forms the border with Ontario County. Varick is located in the Finger Lakes Region of New York.
Several main roads run through Varick. These include New York State Route 89, New York State Route 96, New York State Route 96A, and New York State Route 414. They all run north and south. New York State Route 336 is a short road. It runs east and west, mostly along the northern town line.

In 2010, there were 1,857 people living in Varick. They lived in 676 households. About 460 of these were families. The town had about 57.5 people per square mile (22.2 per square kilometer).
Most people in Varick were White (95.2%). About 2.5% were Black or African American. A small number were Native American or Asian. About 1.1% of the population was Hispanic or Latino.
About 26.6% of households had children under 18. Most households (57.1%) were married couples. About 32.0% were not families. Many people (25.1%) lived alone. About 10.5% of households had someone 65 or older living alone. The average household had 2.58 people. The average family had 3.09 people.
The population's age spread out. About 32.5% were under 20 years old. About 15.4% were 65 or older. The average age was 40.7 years. For every 100 females, there were about 105 males.
The average income for a household was $57,841. For a family, it was $66,667. About 5.9% of families lived below the poverty line. This included 23.3% of those under 18.
Many farms in eastern Varick are worked by Amish farmers. In the northern part, Mennonite farmers work the land. The farms on the eastern slope, near Cayuga Lake, mostly grow grapes for wine.

- McDuffie Town – A place near Cayuga Lake, on County Road 128.
- Romulus – A community that sits on the border with the town of Romulus. It is on NY-96. It has a school and a post office.
- Seneca Army Depot – The northern part of this former army base is now a home for young people.
- Varick – A place at the crossing of NY-96A and County Road 127. It is near the former Seneca Army Depot and has a fire department.
- Yale – This used to be a train station on Yale Station Road (CR 126). Now, it is farmland.
- East Lake Road – A busy area with many homes along the shore of Seneca Lake.
