Sujebi (Korean: 수제비) is a yummy, traditional Korean soup. It's like a Korean-style pasta soup! It has hand-torn dough pieces and different vegetables. People have been eating it since the early Goryeo period, a long time ago in Korea.

In the past, when people didn't have much food, they made sujebi with just a little dough and leftover vegetables. After the Korean War, rice was hard to find. Many people ate sujebi instead because wheat flour was cheaper. But sometimes, sujebi with lots of different ingredients was a special meal. People ate it on celebration days or for a feast.

Today, there are many kinds of sujebi. Lots of people enjoy it as a healthy food. It's a bit like another Korean dish called Kalguksu. The difference is that Kalguksu uses noodles, while sujebi uses hand-torn dough pieces. Both are great to eat on a rainy day because they have a hot, tasty soup. Sujebi is often eaten with kimchi.

What's in a Name?

The name sujebi became popular during the middle of the Joseon period. The name comes from old Chinese words. Su (手) means 'hand', and jeop (摺) means 'folding'. Over time, the pronunciation changed to make it easier to say.

People in different parts of Korea might call it by different names. But sujebi is the most common and standard name used everywhere.

Different Kinds of Sujebi

There are two main types of sujebi, depending on the kind of broth (soup base) they use.

One type uses a clear Korean soup. For this, the dough pieces are usually torn roughly by hand. The other type uses seaweed soup. In this version, the dough pieces are often round-shaped. These round dough pieces are called "Saeal" (새알 in Korean).

When people in Korea talk about sujebi, they usually mean the one with the clear soup. This type can also have different ingredients. For example, potato sujebi has potatoes. Seafood sujebi has different kinds of seafood. Many restaurants today are creating new sujebi recipes to attract more customers.
