How Buffalo Wings Began

The exact story of who invented Buffalo wings is a bit of a mystery! Many people believe they were first made in 1964. This happened at the Anchor Bar in Buffalo, New York. Teressa Bellissimo, who owned the bar with her husband Frank, is often given credit.

Back then, chicken wings were not a popular food. They were often thrown away or used for making soup. But Teressa found a delicious new use for them!

There are a few stories about how Teressa created them:

  • One story says her son, Dominic, was working at the bar. When his friends showed up late one night, Teressa needed a quick snack. She decided to deep-fry the wings and toss them in hot sauce.
  • Another story suggests that the bar received too many chicken wings by mistake. Frank asked Teressa to do something with them. That's how the famous Buffalo wing was born!

Even though the Anchor Bar is famous for them, another local restaurant, Duff's, also started selling Buffalo wings in 1969.

Some people say that John Young helped make chicken wings popular in Buffalo. He moved there in 1948. Starting in 1961, he served his own special breaded, deep-fried wings with a tomato-based Mumbo sauce. John Young was even honored in 2013 at the National Buffalo Wing Festival for his contributions!

Growing Popularity of Wings

Buffalo wings became super popular as a snack and appetizer throughout the 1970s and 1980s. They were a hit across the United States and in nearby parts of Canada.

Big restaurant chains started to focus on Buffalo wings. Buffalo Wild Wings opened in 1982, and Hooters in 1983. Even McDonald's sold "Mighty Wings" for a while in 1990.

After the Buffalo Bills football team played in four Super Bowls, Buffalo wings became even more famous! In 1994, Domino's pizza added them to their menu. Pizza Hut followed suit the next year.

As wings became more popular, restaurants created many new sauces. These sauces were inspired by flavors from China, Japan, Thailand, the Caribbean, and India. You can now find unique flavors like Blueberry BBQ or Maple/Bacon glaze!

Preparing the Chicken

Chicken wings are usually cut into two main parts for Buffalo wings: the "drumette" and the "flat." The very tip of the wing is often removed.

Traditionally, these chicken pieces are deep-fried in hot oil. They are cooked without any breading until they are golden brown and crispy. Sometimes, wings are also baked, grilled, or broiled instead of fried.

The Famous Sauce

The classic Buffalo wing sauce starts with a cayenne pepper-based hot sauce. Famous brands like Frank's RedHot are often used. This hot sauce is mixed with melted butter and vinegar.

You can make the sauce mild, medium, or super hot! Other ingredients like Worcestershire sauce and garlic powder are sometimes added. Many stores also sell ready-made wing sauces with different levels of spiciness.
